Sweet Breakfast Omelet

Sweet Breakfast Omelet

Sweet omelet adds an interesting twist to your regular breakfast omelet and is quite filling on its own. The first time I read about sweet omelet was the Persian sweet omelet with dates. Later I found interesting versions with different fillings like chocolate chip, jam filled sweet omelet and  poached fruit omelet. Earlier I posted a recipe of Malabar Kayapola which is a thick omelet loaded with ghee roasted plantains and nuts. In this recipe I have used dates, nuts and coconut. You can use any nuts of your choice. Try this, hope you will all enjoy :)

Ingredients
Eggs - 2
Milk or cream- 1 tbs
Sugar or maple syrup- 1 1/2 tsp
Salt- a pinch
Cinnamon- a pinch
Vanilla essence-a few drops
Cashew nuts chopped- 5-6
Almonds chopped- 5-6
Dates chopped- 3 tbs
Coconut shredded- 2-3 tbs
Butter- 1 tsp

Beat egg, cinnamon, sugar, salt, cream/milk and vanilla essence till the egg mixture is thick and bubbly. Heat butter in a pan and when it melts pour the egg mixture and allow the bottom to set and spread the chopped nuts, dates and coconut over the top before it starts thickening. Reduce the heat and cook for two minutes. When one side is golden brown flip over and cook the other side just like regular omelet. Serve with bread or with a little whipped cream as a breakfast dessert.

Try this
Hope you will all enjoy!

Dilkhush- Baking partners challenge#8(Tangzhong Method)

Dilkhush- Baking partners challenge#8(Tangzhong Method) Baking partners challenge#8 is learning a new method of bread making. I always wished to learn bread baking at home and I thoroughly enjoyed this months challenge. There were two method of bread making, for this months challenge-one is Asian method Tangzhong and other is Scandinavian method of Scald flour. I tried the Asian Tangzhong method which was relatively easy to put together. More important reason was that I wished to learn the technique of making dilkush or tengai bun which is very soft bread with sweet coconut filling. This was the most popular sweet snack available at a local bakery back home in India and my favorite as a child. I have earlier posted a different version of  dilpasand recipe with pastry dough. It is a quicker version. This post brought back some nostalgic childhood memories. Thanks Swathi for suggesting this recipe White bread/ Dilkhush with Tangzhong method (Adapted from Christine's Reci

Stuffed Fish Fry

This is a delicious stuffed fish fry which is tangy and spicy.I was fascinated when I saw a stuffed Pomfret recipe. Usually there are different types of stuffing like sauteed prawns or crab meat. But here I used a tangy tomato and onion masala very similar to the Karimeen  pollichathu , that I posted earlier. You can use two fish fillets and make a  sandwich or slit through the fish very close to its bone and fill in the stuffing. Give this recipe a try,you will surely love this.
