You can use vegetable, chicken, eggs, or minced meat. Egg puffs are crispy, flaky puff pastry parcels filled with egg onion masala, and it is flavorful. These delightful egg puffs are a treat for your taste buds. If you love to entertain, this is an appetizer that never fails to impress. Freshly baked puffs have an enticing flavor that is hard to resist. Puffs are a common item in Kerala bakeries, and the bakery near our home mutta puffs/egg puffs was a huge hit. You can buy freshly baked ones during evening hours, and it is perfect as a tea time snack. Egg puffs are easy to make, and store brought frozen puff pastry comes in handy when you want a quick snack for tea time. It is crispy and flaky outside, and you bite into a hard-boiled egg and caramelized onion masala. The masala tastes delicious with caramelized onions, earthy spices, and a tang from ketchup and lemon juice. You can also try vegetable, chicken, or meat puffs.


 

Kerala Bakery Style Egg Puffs/ Mutta Puffs

Ingredients
Puff pastry sheet- 1 pack

For the filling
Hard boiled eggs - 4
( I cut pastry sheet into 8 pieces)
Onion - finely chopped- 3 medium
Ginger garlic paste- 1 1/2 tsp
Turmeric powder- 1/8 tsp
Chilly powder- 1/2 tsp
Pepper powder- 1/2 tsp
Meat masala- 1 tsp
Tomato ketchup- 1 tbs
Lemon juice-  a few drops(optional)
Chopped coriander leaves- a little

Heat oil in a pan and saute onion till golden brown. Add ginger-garlic paste and fry till the raw flavor disappears. Make a paste of all the masala powders with 2-3 tbs of water and add and continue frying till oil separates. Add ketchup, and boiled eggs cut into half. Add lemon juice and coriander leaves and coat with masala. Allow this to cool completely.

Thaw puff pastry as per package instruction. Roll out and cut into squares. Beat one egg to use as egg wash and keep aside.
Place spoonful of masala and one egg piece on the center of the pastry sheet. Brush the four sides of the pastry sheet with egg. Pull the corner towards the center and seal. Brush the outside with the egg wash and bake at 375 degrees F, and bake till the outside becomes crispy and golden brown. Place on a cooling rack, and it cools down completely before serving. Serve with a cup of tea.

Uzhunnu Vada/Urad Dal Vada

Uzhunnu Vada/Urad Dal Vada Uzhunnu vada or medu vada is a very common snack in south India and is a perfect accompaniment with a cup of hot piping tea.I like it as a snack but again cannot resist when it is served with idli,sambar and chutney as breakfast. One might wonder where does all the aroma come from? The  plain deep fried lentils is by itself flavorful because I make them often for  vada curry. But in uzhunnu vada the addition of pearl onions,ginger and curry leaves imparts a wonderful aroma that is irresistible.This is something I really missed when I came here to the US until I started making my home made version. Try this you will surely love it. Ingredients Urad Dal/Black lentil skinless- 1 cup Rice flour- 2 tsp Pearl Onions- 4-5 Ginger finely chopped- 1 inch thick Curry leaves finely chopped- 1 spring Green chilly  finely chopped- 3 Whole black pepper- 5-6 salt to taste Oil- 2 cup to fry Wash and soak urad dal and rice for about 4-5 hours. Drain
